Sara Janet Carroll passed away peacefully on August 1, 2026, at Menard Manor in Menard, Texas, at the age of 88.
Born on May 15, 1938, in El Paso, Texas, Sara was the daughter of Ardelle Beech West and Lionel Marcus West. El Paso was the place she loved and called home throughout her life.
Sara dedicated many years of service as an Office Manager for Dairy Health, where she was known for her dedication & hard work. She was also a faithful member of the Church of Jesus Christ of Latter-day Saints, Chamizal 4th Ward in El Paso, Texas, where she found strength in her faith and built lasting friendships.
Above all else, Sara treasured her family. She is survived by her children William Hughes, Kevin Hughes, Randy Carroll, Cathy Dorr, and Barbara Rollwitz; her 18 grandchildren; her 27 great-grandchildren; and numerous extended family members and friends who will cherish her memory. She was preceded in death by her parents, Ardelle Beech West and Lionel Marcus West; her siblings, Betty Jeane Marsh, Lionel Marcus West Jr., and Mary Ardelle West; and her beloved son, Curtis Carroll. Sara's family was her greatest joy, and she took immense pride in the lives and accomplishments of her children, grandchildren, and great-grandchildren.
Sara found joy in life's simple pleasures. She loved watching murder mysteries, searching for treasures in thrift stores and pawn shops, and spending time with her family. Whether sharing stories, offering wisdom, or simply enjoying the company of loved ones, she made those around her feel valued and loved.
Sara will be remembered for her strength, resilience, sense of humor, unwavering faith, and deep devotion to her family. Though she will be greatly missed, the love she shared and the legacy she leaves behind will continue through the generations she helped shape.
Her family finds comfort in the memories they shared and in knowing that her influence will live on in the hearts of all who knew and loved her.

Visitation will be held at 4:00 pm to 8:00 pm Tuesday August 11, 2026 at Sunset Funeral Home-East, 750 N Carolina Dr.
Funeral Service will be held at 11:00 am Wednesday August 12, 2026 at The Church of Jesus Christ of Latter-day Saints, 1212 Sumac Dr.
